Menu Plan Monday

Last week went pretty well.  Changed the plan for Saturday and had takeaways instead after Miss 5's party.  Too tired to cook.

On to Menu Plan Monday - the only problem with doing this is that I'm always a day ahead of the post from Orgjunkie, so have to remember to go and link up on Tuesday.  Oh well.


Monday - homemade pizza (Miss5's request and karate starts again, need something easy)
Tuesday - Sticky Thai chick (see below), rice, stir fry veg
Wednesday - Tortellini bake with salad
Thursday - Thai beef salad (mine is similar to this one, but I use sirloin steak not fillet)
Friday - crockpot lasagne (Mr8's request), salad
Saturday - Chicken curry, chickpea curry... probably raita, rice and a vegetable
Sunday - Kefta meatball tagine with eggs, couscous (DH's request)

Sticky Thai Chicken (can be done in the slow cooker or conventional oven)

This is one of the easiest dishes ever.  Haven't put  amounts because it depends on how much chicken you have - you'll need enough to fairly coat the chicken.  The idea is to get a balance between sweet, salty, sour, hot though.

Mix together:
  • apricot jam
  • Sweet Thai chilli sauce
  • soy sauce or fish sauce
  • tomato sauce
  • crushed garlic
  • lemon or lime juice

Pour onto chicken (I'll be using chicken pieces with bone in).  Bake until cooked.

(I'll be adding some grated lemon grass and finely chopped kaffir lime leaves to the mixture too.)

  1. Mmmmm, sticky thai chicken, is the best....... quick, easy, and oh so delicious........ might have to put it on our menu this week too.

    Hmmm we do a sticky chicky with cous cous - but ours is chillie sauce and honey :p

    Tuesday night is usually homemade pizza night ;p

  3. Love the sound of the sticky thai chicken. I would be using checken breasts though. Bit worried about quantities though, may end up more of a dessert if am not careful :)

  5. Happy New Year Penny. What a few busy weeks you have had with painting ( had a giggle about the body painting), and xmas and guests thrown in and throwing a birthday party for missy moo. What a neat man cave/space dh and ds will have with the trains, love the building dh had made. What wonderful memories are going to created with that neat project. I did giggle at the fact ds opened pressies so fast and then got everyone else up. What a great party you threw for Missy Moo. Whooo hoo for meny planning gotta love that I like your chickn recipe above and that tortellini is a goodie too. Reading wise I failed big time at taking photos of books I read. Quite interesting reading your reading round up, I looked at the Downstairs one a few times and ummed and ahhed, but given you read it and reviewed I will reserve that at the library. Must also give the Joanna F recommended book a go. Oh I can't wait to see your dress. I quite like the styles of 50 dresses too....
